Gluten-free diets are becoming ever more popular as many consumers feel better avoiding wheat or gluten-containing foods, but there can be just as many health pitfalls in gluten-free eating as there are in typical diets. At this year’s Expo Michaela Karlsen, author of A Plant-Based Life will have a talk that will clarify what is known about avoiding gluten, how a gluten-free diet can be a step up or a step down, and offers easy steps for creating and maintaining a healthy, gluten-free diet and lifestyle.
Not only is she the author of A Plant-Based Life which is to be released July of 2016, she is also a contributor to the New York Times bestselling book Forks over Knives: The Plant-Based Way to Health. Michaela holds an MSPH (Master’s) from Johns Hopkins Bloomberg School of Public Health, and a BA in Psychology from Cornell University. She is currently a doctoral candidate at the Tufts Friedman School of Nutrition Science and Policy, in Boston, MA.
