On behalf of the Women’s Health & Fitness Expo we would like to thank all the volunteers that worked the expo & made the event a success.

We would like to thank Leslie Rolnick, Lis D’Alessandro, Dr. Simona Meca, Master Elaine Ward, Hans Brand & Michael Rodriguez, Master Keith Bennett, Sherra Pazmino, Maryanne Kesting, Rose Rubin, Patricia Laufer & Tara McIndoo for the magnificent workshops they presented at this years expo.

We also want to thank Roufia Payman, Julia Elliott, Bruce Paley, Diane Henderiks, Lisa Woodrum & Lynn Howell for the chef demonstrations & all the excellent tips about eating healthy that they shared with us.

Strawberry-Avocado Salsa

Simple & delicious  🙂

 

Ingredients

  • 1 cup finely chopped strawberries
  • 1/4 cup finely chopped peeled avocado
  • 2  tbsp finely chopped red onion
  • 2 tbsp chopped fresh cilantro
  • 1/2 tsp grated lime rind
  • 2 tbsp fresh lemon juice
  • 2 tsp finely chopped seeded jalapeno pepper
  • 1/4 tsp sugar

 

Preparation

1. Combine all ingredients in a medium bowl; toss gently. Serve immediately.

Healthier Apple Crisp

  • 10 cupsunpeeled, cored, and sliced apples
  • 1/2 cupwhite sugar
  • 1 tablespoonwhite whole wheat flour
  • 1 teaspoonground cinnamon
  • 1/2 cupwater
  • 1 cupquick cooking oats
  • 1 cupwhite whole wheat flour
  • 1/2 cuppacked brown sugar
  • 1/2 cupchopped walnuts
  • 1/4 teaspoonbaking powder
  • 1/4 teaspoonbaking soda
  • 1/2 cupbutter, melted

 

  1. Preheat oven to 350 degrees F (175 degree C).
  2. Place the sliced apples in a 9×13 inch pan. Mix the white sugar, 1 tablespoon flour and ground cinnamon together, and sprinkle over apples. Pour water evenly over all.
  3. Combine the oats, 1 cup flour, brown sugar, baking powder, baking soda, walnuts and melted butter together. Crumble evenly over the apple mixture.
  4. Bake at 350 degrees F (175 degrees C) for about 45 minutes.
